For the best fluffy scrambled eggs recipe, we combined eggs, salt, pepper, and milk in a bowl and whisked lightly (overbeating can cause premature coagulation of the egg proteins, thereby making the eggs tough before they hit the pan). For our scrambled eggs recipe, we used a nonstick pan appropriate to the number of eggs we were making (too large and the eggs will spread too thin and not cook properly). Then we cooked the eggs in butter over high heat for less than a minute, folding them constantly rather than stirring, for big, fluffy curds.
