Our new cookbook, The Perfect Pie, includes more than 180 recipes for display case-worthy pies, tarts, and galettes of all types: classic takes like Apple Pie, regional specialties like North Carolina Lemon Pie, and uniquely flavored creations like Lavender Crème Brûlée Pie. We're so excited about this collection of new recipes and old favorites that we decided to start a Pie of the Month Club so we can share twelve of our favorite seasonal recipes with you, our community of fellow pie-lovers. (And yes, those three aforementioned recipes are included in the Club, but you'll have to stay tuned to see which months they represent. . . )

August's Pie of the Month: Coconut-Raspberry Gelato Pie
Welcome to the last month of Pie of the Month Club. We hope you’ve enjoyed baking pies along with us as much as we loved developing these recipes. It’s fitting that we end our 12 months of pie baking with a pie you don’t even have to bake. This icebox pie is quick and easy, using store-bought ingredients, but it also boasts a complex flavor profile. The sweet-tart sorbet contrasts perfectly with the creaminess of the coconut gelato. This pie is great for the hot month of August, a refreshing dessert that’s a step up from your run-of-the-mill ice cream pie. Enjoy!
