Ashley Moore's Favorite Recipe: Perfect Chocolate Chip Cookies

Continuing my quest to discover more about my ATK colleagues and their favorite recipes, I spoke to Cook’s Country TV cast member, Today’s Special host, and food stylist Ashley Moore. Ashley favors cooking for her loved ones, so, unsurprisingly, her all-time favorite recipe came in the form of a family classic: chocolate chip cookies.

But these aren’t just any cookies. These are Cook’s Illustrated’s Perfect Chocolate Chip Cookies, and Ashley told me exactly what makes them so perfect.

So Ashley, what is your favorite ATK recipe?

Ashley Moore: This is going to sound so basic and simple, but I don’t think there’s anything wrong with that. It’s hard to give a favorite, but in the top three is the Perfect Chocolate Chip Cookies recipe.

What is it about the Perfect Chocolate Chip Cookies recipe that makes it your favorite?

AM: It’s easy to do, it doesn’t take a long time, and the browned butter just adds so much to a cookie. Once you add it, you want all of your cookies to taste like that. 

I’m not even a huge sweets person, but I just had to choose them. I’ve made these in a cast-iron skillet, too, but I’ve made it with my oldest son about a half dozen times and it’s our go-to house chocolate chip cookie for sure. Everybody loves them—how could they not?—so they’re a sure-fire crowd-pleaser.

Our perfect chocolate chip cookie recipe had to produce a cookie that would be moist and chewy on the inside and crisp at the edges, with deep notes of toffee and butterscotch to balance its sweetness.

I certainly don’t need any more convincing to make these, but what’s the best reason to try them at home?

AM: The best reason to make these is the very fact that it all comes together essentially in two bowls! They really are worth your time. The browned butter adds a ton of complexity and nuttiness and deliciousness, and they’re just supereasy to make.
