- Microwave the mixture until the blue cheese is softened. (This should take about 30 seconds.)
- Whisk in 3 tablespoons of sherry or red wine vinegar until the dressing is combined.
You’ll be left with a creamy dressing that is tangy, smooth, and a little bit funky. Its texture allows it to effortlessly cling to your lettuce, leaving no piece untouched.
