For Your Next Salad, Try This 60-Second Blue Cheese Dressing

This three-ingredient dressing will be done before you can say “blue cheese.”

Let’s face it. Salads can get boring.

You can change up the lettuce or the toppings to try to keep things fresh. But for me, the best way to mix up my salad game is to switch up the dressing I use. I don’t always love the texture or taste of bottled dressings, though, and too many homemade dressings require lugging out the blender.

For this creamy dressing, there’s no blender necessary. All you need is a microwave and whisk.

Shake up your routine with delicious and wholesome meals that let you leave the laundry list of ingredients behind.

Here’s how to make it: 

  1. Add ¼ cup of olive oil and ¼ cup of crumbled blue cheese to a large bowl. 
  2. Microwave the mixture until the blue cheese is softened. (This should take about 30 seconds.) 
  3. Whisk in 3 tablespoons of sherry or red wine vinegar until the dressing is combined.

You’ll be left with a creamy dressing that is tangy, smooth, and a little bit funky. Its texture allows it to effortlessly cling to your lettuce, leaving no piece untouched.
