From supermarket aisles to bakery cases, lemon-poppy seed muffins are everywhere—and they're easy to love. When developing our muffin recipe, we wanted a muffin with rich, full flavor and a thick, crisp crust protecting its fragile, tender crumb. We also wanted to produce a true beauty, sporting a perfectly round, mushroom-like cap with a pronounced and crisp overhang. This version also gets a healthy dose of lemony tang thanks to an ample amount of grated lemon zest and a zippy lemon-juice glaze.

“These Bakery-Style Lemon-Poppy Seed Muffins are perfectly sweetened and tender with a tart lemon glaze and sprinkling of coarse sugar!,” Jessica writes. “Thanks to the work of America’s Test Kitchen's experts, the recipe is foolproof.”

“This cookbook really is an essential handbook. This handbook is the first time that the cumulative wisdom of the test kitchen has been gathered and organized to create a go-to kitchen handbook for home cooks. Perfect for brand-new cooks and experienced cooks alike, this book contains equipment testings, ingredient tastings, food science, technique instruction, and research and development. And, of course, recipes that put all of that information together!”
