One-Pan Wonders is a fresh, modern collection of 138 recipes that makes the most of your skillet, sheet pan, Dutch oven, casserole, roasting pan, or slow cooker to deliver dinner with a minimum of fuss. Here in the test kitchen, we saw one-pan recipes as the ultimate challenge. With a clear goal in mind, we set out to streamline our favorite dishes (and think up a host of new ones) for an inspiring range of satisfying meals.

Everyone loves chicken pot pie. But cooking chicken pot pie can be an involved process, and this tends to deter most home cooks. The chicken pot pie recipe from our recent publication, One-Pan Wonders, will dispel your fears about this often time-consuming dish. We simplify this savory pie without sacrificing its homey flavors by preparing it in a skillet.

“Everything cooks in one pan and you throw some puff pastry on top and bake it!” writes Alice Choi of Hip Foodie Mom. “Couldn’t be easier!”

After reading through One-Pan Wonders, Alice selected this recipe to cook for her busy family. The recipe relies on a few store-bought convenience items—and comes together in just one pan—so it's a pot pie you can pull off on any night of the week.

“I don’t know about you, but one pan equals less dishes for me to wash . . . which makes me very happy,” writes Alice.

This version of chicken pot pie is streamlined, calling for poaching the chicken breasts directly in the sauce. The filling comes together quickly in a skillet. Then, it's topped with a convenient and even flakier alternative: store-bought puff pastry. Our streamlined pie baked to a beautiful golden hue in just 30 minutes.
