Here's How to Cook Four, Five, or Even Six Crunchy, Gooey Grilled Cheese Sandwiches at Once

Whether it’s grilled cheese, tuna melts, or gooey reubens, toasty sandwiches are the ultimate comfort food. Most recipes call for cooking these sandwiches one or two at a time in a skillet. It’s quick and you can watch as the cheese melts and the bread becomes golden brown. 

But if you’re being generous with your melty sandwiches and making more than just one or two, it’s just as easy to use your oven! They’ll warm through more evenly in the oven and you can fit up to six on a baking sheet at a time, meaning you can cook enough grilled cheese sandwiches to feed your family, friends, or self in one batch.

How to Make Grilled Cheese in the Oven

  1. Line a rimmed baking sheet with foil (for easy clean-up and to prevent melty cheese from sticking).
  2. Slather one side of each piece of bread with your fat of choice. (Butter is classic, but mayo works very well, too! If you use butter, melt it first and brush it on for even coverage. And if you want to get wild, spike the butter with some rendered bacon fat.)
  3. Arrange half the bread fat side down on the baking sheet, pile on the cheese and whatever other fillings you want (ham, tomato, crisp bacon, onion, spinach, chutney . . . ), and top with the rest of the bread fat side up. 
  4. Bake the sandwiches at 425 degrees on your middle oven rack until the cheese is melted, about 15 minutes, flipping them halfway through baking. 
  5. Let them cool for 5 minutes, or if you don’t care about the health and safety of your tongue, don’t.
