Lauren from the Zestful Kitchen Blog Makes Chocolate Pots de Crème

Former test titchen intern and Zestful Kitchen blog owner Lauren Grant did just that, and found herself learning how to make Chocolate Pots de Crème at home.

“I recently checked out America’s Test Kitchen’s online Cooking School and I was amazed at the hundreds of recipes (272 to be exact) that they have thoroughly compiled with step-by-step photos, videos, information, and more," writes Lauren. "From yeast breads, marshmallows, grilling and braising meats, to cakes, pastas and more, one can master any and all of the 272 recipe courses (and counting) they have to offer.”

For the chocolate flavor we wanted, we favored bittersweet chocolate over milk and semisweet chocolate.

Through the test kitchen’s unique instructional approach, you can follow our step-by-step guide for making this decadent dessert with its intense chocolate flavor. For this recipe, we moved the dish out of the oven and took an unconventional approach: cooking the custard on the stovetop in a saucepan, then pouring it into ramekins.

“This Chocolate Pots de Crème recipe isn’t for the faint of heart," writes Lauren. "It’s got bold flavor accompanied by the most thick, creamy texture. It’s honestly dessert gold. And to top off all its glorious goodness, Chocolate Pots de Crème is incredibly easy to whip up."

Covered tightly with plastic wrap, the Pots de Crème will keep for up to three days in the refrigerator, but the whipped cream must be made just before serving.
