This mashed butternut squash couldn’t be simpler. Microwave chopped squash for about 10 minutes. Add butter and salt. Then mash until it’s luxuriously creamy.

Mashed Butternut Squash
Serves 4
Total Time: 20 minutes
- 2 pounds butternut squash, peeled, seeded, and cut into 1-inch pieces (5½ cups)
- 1 tablespoon unsalted butter
- ½ teaspoon table salt
Microwave squash in covered bowl until tender, 8 to 12 minutes, stirring halfway through. Drain, if necessary, then add butter and salt and mash with potato masher in large bowl until smooth and well combined. Cover and keep warm until ready to serve.
