A Buffalo Chicken Dip You’ll Dip in Again and Again

Say goodbye to greasy, rubbery buffalo chicken dip.

Published Jan. 19, 2023.

By now, everyone knows that buffalo chicken dip is the easier—and less messy—alternative to buffalo wings (which, by the way, have a pretty interesting origin story).

But I’ve attended enough potlucks and football viewing parties to know that there is no shortage of disappointing buffalo chicken dip recipes out there.

Some are too greasy. Others are overloaded with chicken. And then there are those with a leathery cheese barrier that breaks any chip you throw at it—leaving all the chips (and dip) in the baking dish.

With the right recipe, you can make a buffalo chicken dip that is the envy of all chip dippers.

At ATK Kids, we adapted Cook’s Country’s killer buffalo chicken dip recipe for our teen-approved cookbook, The Complete Cookbook for Teen Chefs. And along the way, we learned a few tricks to ensure the dip is the perfect balance of cheesy, chicken-y, and spicy.

Tips for the Best Buffalo Chicken Dip

  • Start with a rotisserie chicken or leftover chicken. Tasters won’t be able to tell the difference between that and freshly cooked chicken.
  • Use Frank’s RedHot sauce. Tabasco and fancy craft sauces won’t fly here.
  • Reach for ranch dressing (not mayo) for a cohesive dip that doesn’t break into greasy puddles.
  • Briefly microwave the cream cheese (along with the hot sauce) so the ingredients incorporate more readily.
  • Right before serving, sprinkle the dip with sliced scallion for pops of green (and extra blue cheese for good measure).
