By now, everyone knows that buffalo chicken dip is the easier—and less messy—alternative to buffalo wings (which, by the way, have a pretty interesting origin story).

But I’ve attended enough potlucks and football viewing parties to know that there is no shortage of disappointing buffalo chicken dip recipes out there.

Tips for the Best Buffalo Chicken Dip

  • Start with a rotisserie chicken or leftover chicken. Tasters won’t be able to tell the difference between that and freshly cooked chicken.
  • Use Frank’s RedHot sauce. Tabasco and fancy craft sauces won’t fly here.
  • Reach for ranch dressing (not mayo) for a cohesive dip that doesn’t break into greasy puddles.
  • Briefly microwave the cream cheese (along with the hot sauce) so the ingredients incorporate more readily.
  • Right before serving, sprinkle the dip with sliced scallion for pops of green (and extra blue cheese for good measure).
