Our Breakfast Quesadillas Have a Crispy Tot Surprise

But we wanted to switch up our breakfast quesadillas even more.

Not only do the tots add crunchiness and bulk to these quesadillas, they’re an easy way to get breakfast potatoes without the hassle of washing, peeling, and cooking fresh potatoes.
All you have to do is thaw about 20 tots, toss them in an oiled skillet, and flatten them with a spatula. Then, we cook them on both sides until they’re golden brown and crispy and somewhat resemble a giant hash brown. To assemble our quesadillas, we layer the potato tots, cheese, scrambled eggs, and crumbled breakfast sausage in flour tortillas.
