Portable, fun to make, easy to gift, and open to countless flavor variations, cookies are everyone's favorite sweet treat. In the test kitchen's first all-cookie book, The Perfect Cookie, we've created a one-stop shop for every cookie recipe you could want, from simple side-of-the-saucer snacks like Shortbread Cookies to intricate treats like Italian Rainbow Cookies and holiday cookies like Peppermint Candy Canes. Each of the 250 recipes are kitchen-tested to not only work, but to exceed expectations every time. And with almost 25 years of experience baking cookies and bars of all kinds, we've also provided all the tips and tricks for executing perfect cookies every time.

Who doesn't like cookies? Answer: no one. Jenna from the Butter Loves Company blog agrees. So when we released our latest book, The Perfect Cookie, she was eager to cook from it.

“With dozens of recipes for classics like Snickerdoodles, Gingersnaps, Sables, and Palmiers, to new stunners like Peppermint Surprise Brownie Bites, Chocolate Peanut Butter Candies, and Cornmeal Olive Oil Cookies, each page of The Perfect Cookie is deliciously bookmark-able," writes Jenna. It's tough to choose when you've got 250 recipes at your disposal, but Jenna decided to start with our recipe for Dulce de Leche and Cinnamon Sandwich Cookies.

Dulce de leche, a rich and creamy South American caramel made from cooked milk, is the star of these deceptively simple sandwich cookies. We add anise to the mix to enhance the flavor of the warm cinnamon and complement the milky caramel filling, and give the cookie dough a roll in cinnamon sugar before baking for a sugary coating in every bite.

The result? In Jenna's words: a "perfectly sweet, decadent, warming, party-worthy sandwich cookie."

The Perfect Cookie

There are tips and tricks throughout, and insight on everything from what makes a cookie crunchy vs. chewy, to equipment and ingredients that set you up for success, and a troubleshooting guide that keeps you in control of every batch. The result? The perfect cookie, every time.
