Portable, fun to make, easy to gift, and open to countless flavor variations, cookies are everyone's favorite sweet treat. In the test kitchen's first all-cookie book, The Perfect Cookie, we've created a one-stop shop for every cookie recipe you could want, from simple side-of-the-saucer snacks like Shortbread Cookies to intricate treats like Italian Rainbow Cookies and holiday cookies like Peppermint Candy Canes. Each of the 250 recipes are kitchen-tested to not only work, but to exceed expectations every time. And with almost 25 years of experience baking cookies and bars of all kinds, we've also provided all the tips and tricks for executing perfect cookies every time.

What’s not to love about trail mix? It’s equal parts savory and sweet, crunchy and savory. Add all of these elements to cookies and you’ve got the perfect one-handed after school treat.

“Oh these cookies are soooo good!” exclaims Tessa of Style Sweet CA. “I literally can't stop eating them and I don't even feel bad about it. The recipes comes from America's Test Kitchen's latest masterpiece: The Perfect Cookie. Perfect, indeed!”

In our quest to develop a more healthful cookie, we sought to pack a whole-grain dough with a variety of interesting mix-ins. A small amount of cinnamon gave the cookies a rounder flavor, and using brown sugar rather than white gave us the biggest bang for our buck; its deeper flavor meant we didn’t need to use an excessive amount of sugar.

“I book-marked over a dozen recipes to make, but I ultimately picked the Trail Mix Cookies because I had all of the ingredients already," Tessa writes. "All of the ingredients that I wanted to use, that is. I love this recipe because it is totally customizable.”

Tessa prepared these cookies to celebrate her son starting pre-school, but you don't need a special occasion to make these. The recipe is customizable, so you can use your favorite ingredients—or just what you have on hand. Tessa is squarely in the "the more add-ins the better" camp: “The fun comes with all the add-ins. I live for add-ins! These hearty cookies are filled with an assortment of nuts, seeds, fruit, and a little bit of chocolate (because you can't leave out the chocolate, am I right?).”
