What is the best way to slice a bell pepper into strips?

We love “breakfast” for dinner. Breakfast is in quotes there because those kinds of distinctions are, really, kind of fabricated. Who says eggs are breakfast food and burgers are not? Take this recipe for a savory frittata. I can’t imagine the person who’d discount it as a totally satisfying supper.

To create the thin strips of red bell pepper you need for this recipe (or for any other recipe that calls for strips of bell pepper, such as fajitas, maybe), here is your best move:

  1. Slice off the top (stem end) and base of the bell pepper to create an open cylinder.
  2. Make one cut down through the side wall of the cylinder.
  3. You now have a rectangular length of bell pepper. Lay it flat, remove the ribs, and scrape off the bitter seeds.
  4. Slice the bell pepper crosswise into strips.

KITCHEN TIP: If you want to chop up the top and bottom and toss them in with the strips, go for it. Or nibble on them in the kitchen while you cook.
