Sweet potatoes are a delicious root vegetable. But what isn’t improved by lashings of sweet spices and a few pounds of lard?

After attending a traditional Cajun pig roast for his video series On the Road, Cook’s Country’s Editorial Director Bryan Roof discovered that the sides served at the roast were just as delicious as the prized whole pig itself. 

In Cajun country, Louisiana, thin slices of sweet potato are fried in vats of rendered lard until just tender before they are seasoned with a vanilla-infused cinnamon sugar. Bryan has taken this simple method and developed a foolproof recipe for home cooks to enjoy this sweet, creamy sensation from the comfort of their own kitchens.
