Why and How You Should Cook with Cottage Cheese

I was too busy to attend but didn’t want to miss out, so I rushed over to request that they hold back a tray of samples for me. Lo and behold, they already had a surplus of tasters, and I wasn’t even the first to admit my secret adoration while requesting a separate tasting. There are more of us cottage cheese fans than you’d think!

And even if you don’t love cottage cheese (yet), it’s still a useful tool to have on hand for cooking. Cottage cheese has a mild flavor and creamy texture, and its pillowy curds hold up well at high temperatures. Ricotta, on the other hand, is prone to turning gritty when cooked. Just make sure to use full- or low-fat cottage cheese for cooking, and skip the nonfat.
