How to Keep Your Counter Neat and Tidy When Cooking

Mise en place is the key to smooth cooking.

Many of the cooks at ATK have worked in restaurants, and we like to use the techniques we learned on the job in our home cooking. You likely already know the importance of completing your mise en place (“everything in its place”) before starting cooking. I like to take it one step further by arranging my prepped ingredients on a rimmed baking sheet in the order they'll be used in the recipe. This keeps my counter less cluttered and makes it easier and more efficient to work through a recipe.
