1. CORE:
Peeled tomatoes are slippery, so core them before blanching.
2. BLANCH:
Place the tomatoes (no more than four at a time) in boiling water. Blanch until the skins just begin to split around the cored area, about 15 seconds. Use a slotted spoon to transfer the tomatoes to a bowl of ice water.
3. PEEL:
Once the tomatoes are cool, the skins slip right off with a little help from a paring knife.
