Here are the two quick steps to stuffing your bird.
1. LINE, PACK & TIE: Line the empty cavity of the bird with a folded piece of cheesecloth, making sure that the cheesecloth reaches the end of the cavity. Loosely pack the stuffing into the cheesecloth "bag" (it should hold 10 to 12 cups of stuffing) and tie the bag securely with kitchen twine.
2. SECURE: Secure the turkey's legs by tucking the ankles into the pocket of skin at the tail end.
