Cutting Stew Meat
You can buy prepackaged stew meat, but we prefer to purchase a whole cut of meat and cut it into stew meat ourselves.

1. SEPARATE:
Pull apart the roast at its major seams (delineated by lines of fat and silver skin). Use a knife as necessary.
2. TRIM FAT & SKIN:
With a knife, trim off excess fat and silver skin.
3. CUT IN CUBES:
Cut the meat in cubes or chunks as directed in specific recipes.
