Here’s how to tell when your meat is “fork tender.”

What does "fork-tender"mean? It's the point where the meat has reached the ideal tenderness—a state in which the meat can be shredded using nothing more than two forks (or two hands for that matter). But aside from removing the roast from the oven and tearing it apart, how can you tell if it's done? We like to stick a fork straight into the top of a roast and lift. If the fork comes out with little or no resistance, it's fork-tender. If the fork is difficult to remove from the roast, it's not quite fork-tender and should be cooked longer.
