To answer your question, we tested butter and vegetable oil side by side on our pancake griddle. For the sake of consistency—and to guarantee properly cooked pancakes—we followed our recipe to a “T” and flipped all the pancakes when the bottoms were set and the batter on the top was beginning to bubble (after about one minute over medium heat).

When we greased the griddle with butter, the pancakes overbrowned: The milk solids in the butter brown more quickly than the pancake batter cooks. (The butter may burn, too.) But the pan greased with vegetable oil produced perfectly golden pancakes.

THE BOTTOM LINE  For perfectly cooked, golden-brown pancakes, cook them over medium heat and grease the pan with vegetable oil.
