Efficient cooking method
Steaming the beets, peeled and cut into chunks, in a microwave cooks them more rapidly than a stovetop or oven method would.
Beets seasoned through and through
Salt added to the small amount of water used to steam the beet chunks penetrates their surfaces and leaves them nicely seasoned—an advantage of cutting up the beets over cooking them whole.
To avoid staining the goat cheese dressing pink, we spread it on a platter and mound the beets, arugula, and sliced toasted almonds on top for a stunning presentation.
