Highlight the peas’ sweetness and crisp texture
A dunk in boiling salted water brings out the sweetness in snap and English peas and eliminates any toughness in their skins. We leave the more delicate snow peas raw.
Add visual and textural variety
We cut the snap peas into bite-size pieces and the snow peas into thin strips (which also helps them tangle with the other components). Radishes contribute color and crunch, baby arugula provides fluff and bulk, and fresh mint acts as a secondary salad green.
Maintain a vibrant appearance
Plating the salad—tossed first with lemon juice and olive oil—on top of the creamy dressing ensures that it stays vibrant.
