Adding cornstarch to the batter of rice flour, water, and coconut milk helps soak up extra moisture so that the crepe can crisp.
Pork belly is traditional but not always easy to come by. In its place, we opt for readily available country-style pork ribs. Rather than tiny shrimp, we use (easier-to-find) medium-large shrimp cut into small pieces.
The right accompaniments
Tender Boston lettuce leaves cradle pieces of the crepe along with fragrant Thai basil and cilantro; a classic nước chấm is used for dipping.
