The right chile flavor
A combination of guajillo chiles, paprika, and tea provides the same bright color, mild heat, earthy flavor, and hint of astringency that hard-to-find Kashmiri chiles would.
Tender, juicy pork
Stirring in vinegar halfway through cooking means we can use less. That way the meat stays juicy, but the dish retains a characteristic vindaloo tang.
Though vindaloo would normally be made on the stovetop, we move ours to the oven for even, hands-off cooking.
