Could we get the same results on a gas grill as we do in the oven with our Cod Baked in Foil with Leeks and Carrots recipe?
Our recipe for Cod Baked in Foil with Leeks and Carrots calls for cooking the fish and vegetables in a foil packet, or en papillote, for 15 minutes in a 450-degree oven. But during the summer, turning on the oven is often a nonstarter. Could we get the same results on a gas grill?
After preheating the grill for 15 minutes, we left on only the primary burner, adjusting it to maintain the temperature at 450 degrees. We then placed our packets on a baking sheet and placed the sheet on the cooler side of the grill. Just as we’d hoped, the packets’ contents cooked through perfectly in the same amount of time called for in the oven version. Further testing confirmed that we could apply this method to any en papillote recipe. Simply heat the grill to the same temperature called for in the oven-based recipe, place the packets on a baking sheet on the cooler side of the grill, and grill for the same amount of time. Note that keeping the packets on the sheet is important: It tempers the direct heat from the cooking grate and minimizes handling.
