How to Dispose of Extra Sourdough Starter

What's the best way to dispose of sourdough starter?

Our recipe for Sourdough Starter calls for throwing out a portion of the starter each time you feed it, which is daily at the beginning and then weekly after the first two weeks. We’ve had colleagues ask us about the best way to dispose of the goopy, sticky stuff. Putting it in the trash isn’t ideal, since it can start to smell pretty strongly after a few days, but it’s thick enough to gum up a sink disposal. Here’s what we recommend:

1. Whisk enough cold water into the starter you are throwing out to give it the consistency of heavy cream.

2. Pour it down the drain or onto your compost pile.
