3 Good Ways to Use Whey

The tart liquid has a number of good applications.

If you strain our homemade yogurt, don't pour the whey down the drain. The tart liquid has a number of good applications.

1. Buttermilk substitute:  In our Best Drop Biscuits, replacing all the buttermilk with whey yielded a batch just as tall, tender, and flavorful as the original.

2. Cocktail enhancer:  The tartness of whey can complement or replace citrus in a cocktail, and the dairy protein in it produces a magnificent froth in shaken drinks. Try a whiskey sour using an ounce of whey in lieu of egg white.

3. Yogurt starter:  Freeze whey in an ice cube tray. Then, whenever you want to make a new batch of yogurt, add two cubes to the milk as your starter.

Whey can bring sourness and froth to whiskey sours.
