The Best Way to Cook Peas

Frozen peas are almost always better than fresh shell peas, which tend to be starchy.

Preparation

Frozen peas can be used without any thawing.

Basic Cooking Method

Don't boil peas—they are much better sautéed. Add frozen peas directly to pan with sautéed aromatics (garlic and/or shallots cooked in a few tablespoons of butter until fragrant) and cover pan to trap steam and heat peas through (this will take about 4 minutes). Add 2 teaspoons sugar to 1 pound frozen peas to boost flavor.
