Ingredients: 1 1/2 cups, unbleached all-purpose flour (7 1/2 ounces); 1 tablespoon, granulated sugar; 1/2 teaspoon, table salt; 4 tablespoons, vegetable shortening, chilled in the refrigerator for at least 30 minutes; 4 tablespoons, unsalted butter, cut into 1/4-inch pieces, chilled in freezer for at least 30 minutes; 4 - 6 tablespoons, ice water; 2 1/2 pounds, Granny Smith apples (about 5 medium); 2 pounds, McIntosh apples (about 4 medium); 1/4 cup, granulated sugar; 1/2 teaspoon, ground cinnamon; 1/8 teaspoon, table salt; 2 tablespoons, unsalted butter; 3/4 cup, golden raisins; 1/2 cup, heavy cream; 1 1/4 cups, unbleached all-purpose flour (6 1/2 ounces); 1/3 cup packed, light brown sugar; 1/3 cup, granulated sugar; 1 tablespoon, cornmeal; 7 tablespoons, unsalted butter, melted
