All-Time Best Dinners for Two


While we wish cooking dinner for two was as easy as cutting a recipe in half, in reality the process is a lot more complicated than simply scaling down the quantity of each ingredient. For this book, we took many of our favorite recipes and reengineered them from the ground up to yield two servings. Using clever tricks and techniques for everything from Skillet Eggplant Parmesan to Yankee Pot Roast, our goal was to ensure that our for-two versions were as stellar as their originals.

In this carefully curated collection, we made sure to include something for everyone. Want to skip the restaurant and have a date night at home? Enter elegant dishes such as Risotto Primavera or Steamed Mussels in White Wine with Parsley. You can try Pad Thai or Sichuan Orange Chicken with Broccoli when you are craving the bold flavors of takeout but don’t want leftovers for days. If you’re in a rush on a busy weeknight, no problem—nearly half of these meals take 45 minutes or less to prepare (times are provided for every recipe so you know the commitment beforehand). There are also plenty of meat-free options, from Asian Braised Tofu with Butternut Squash and Eggplant to Pasta with Roasted Cauliflower, Garlic, and Walnuts. Some recipes are full dinners that include a side dish (such as Parmesan and Basil-Stuffed Chicken with Roasted Carrots), while others are entrées (such as Herb-Crusted Beef Tenderloin) that can be paired with one of the 15 additional fuss-free, perfectly scaled side dishes provided in the appendix.

But this book doesn’t just include recipes—we also share everything we’ve learned about cooking for two. We share our shopping strategies—such as how to buy just the right quantity of ingredients so extras don’t go to waste—and how best to outfit your kitchen, as we recognize that storage and counter space can be more limited in for-two households. And no, you don’t need all new equipment; we discovered that a loaf pan was the perfect vessel for baked brown rice, and that ramekins worked well for individual chicken pot pies.

Getting dinner for two on the table shouldn’t be complicated, and our goal for this book was to make it as simple and foolproof as possible.
