Every recipe in this book has been designed and tested to ensure that it can be made in an hour or less. We obsessively timed ourselves as we developed the recipes and then rounded up to 30 minutes, 45 minutes, or 60 minutes based on how long they took, from gathering our ingredients to trying that first bite. We had our kitchen interns make each recipe to double-check the timing, and then we sent recipes to our home cook recipe testers to triple-check.
