Top Pie Baking Equipment

Top Pie Baking Equipment

  • Pyrex Bakeware 9 Inch Pie Plate

Our favorite pie plate browned and crisped crusts better than the other contenders. We also liked its wide rim for easy fluting, see-through bottom that allowed pie-makers to monitor bottom crusts, and low price.

  • J.K. Adams Plain Maple Rolling Dowel

A good rolling pin should spread finicky, delicate pie dough easily and smoothly, without sticking or tearing. A dusting of flour clung best to slightly rough-textured wood, which gripped dough just enough to roll it out. Our favorite pin's long, straight shape made achieving even dough thickness and rolling out larger disks easy.

  • Nordic Ware Baker’s Half Sheet

When it comes to pie baking, we often recommend placing a pie plate on an unheated metal rimmed baking sheet before sliding it into the oven to guarantee a crisp, browned bottom. The metal pan helps conduct heat to the bottom of the pie but without risk of cracking the Pyrex plate since it heats up gradually.

  • Libertyware Half Size Sheet Pan Cooling Rack

Used alone or with our favorite rimmed baking sheet (see above), our winning cooling rack is a piece of equipment no kitchen should be without.

  • Dexter-Russell 6 inch Dough Cutter/Scraper—Sani-Safe Series

Also known as a bench knife, board scraper, or dough cutter, a bench scraper has as many and varied uses as its many names suggest. For scraping, trimming, or cutting dough into smaller pieces, testers strongly preferred thin, deeply beveled edges, which made it easier to dislodge sticky pie dough from the counter and neatly portion off doughs.
