A colorful plate—or bowl—of food is more than just fun to look at. Brightly colored vegetables (and fruits!) are also full of vitamins and nutrients that help make us healthy and strong. Think red tomatoes, orange sweet potatoes, yellow squash, green beans, purple potatoes . . .
Your challenge this month? Create a dish or a snack that includes as many colors of the rainbow—in veggie form!—as possible. There are so many colorful possibilities, from salads and soups to omelets, grain bowls, snack plates, and more!
