The flavorful skin from lemons, limes, and oranges, called the zest, is often removed and used in recipes. If you need zest, it’s best to remove it before juicing the fruit. A rasp grater or the small holes of a box grater are the best tools for zesting.

A citrus juicer makes it easy to extract the juice from citrus fruits. After juicing, use a small spoon to remove any seeds from the bowl of juice.

To Zest:

Rub fruit against rasp grater to remove colored zest. Turn fruit as you rub to avoid bitter white layer underneath zest.

To Juice:

2up Juicing Citrus

Cut fruit in half through equator (not through ends).

Place one half of fruit in citrus juicer. Hold juicer over bowl and squeeze to extract juice.
