Ingredients: 1 3/4 pounds, center-cut boneless pork chops, about 1 1/4 inches thick; 1/4 cup, extra-virgin olive oil plus 2 additional tablespoons; 3 medium cloves, garlic, minced; 2 tablespoons, soy sauce; , Salt and pepper; 1 , large pineapple, peeled, cored, and cut into 1-inch chunks; 2 , red bell peppers, stemmed, seeded, and cut into 1-inch pieces; 1 , large red onion, peeled and cut into 1-inch pieces

These kebabs don't have to be reserved for a luau. We simplified this recipe, and kept all the flavor, for a great alternative weeknight meal.
