Creamy Baked Four-Cheese Pasta with Chicken
Why This Recipe Works
For a creamy baked four-cheese pasta recipe with pieces of tender chicken, we cooked the pasta just shy of al dente, allowing it to turn perfectly tender as it baked in the sauce. To avoid a greasy mess once baked, we added the cheese to a cream sauce thickened with roux (a mixture of flour and butter) before tossing it with the pasta, which bound the cheeses well. We found that poaching the chicken for our four-cheese pasta recipe right in the sauce worked wonders for both, allowing their flavors to commingle.
