Asian Chicken Stock with Sautéed Breast Meat
Why This Recipe Works
Asian spices, such as star anise and Sichuan peppercorns, proved to be too distinctive-tasting for our basic Asian chicken stock recipe and liquids such as rice wine and soy sauce were also overwhelmingly distinctive and presented the additional problem of muddying the color of the stock. Instead, we found that ginger added a subtle perfume to the Asian chicken stock recipe and was well liked by tasters. We also found scallions to be a welcome addition, serving as a more traditional Asian source of the sweet allium flavor supplied by onions.
