Why This Recipe Works
For our miso-glazed salmon recipe we went to work on the marinade, testing different amounts of miso, sugar, and sake until we found a marinade that was perfectly balanced in flavor and had a texture that was thick enough to cling to the fillets. Next, we tested marinating times for our miso-glazed salmon recipe—from as short as one hour to up to three days. We found that the salmon requires a minimum of five hours to really benefit from the marinade, and after 24 hours, it reached its peak of flavor and texture.
