Pork Tinga and Sweet Potato Pot Pie
Why This Recipe Works
We wanted a pork and sweet potato pot pie recipe with a simple tinga and a firm sweet-potato crust. For the pork, we preferred thinly sliced pork loin, quickly seared, to long-simmered pork shoulder. As for the topping for our pork and sweet potato pot pie recipe, we found that cutting the potatoes into rough chunks and cooking them in a modest amount of liquid (heavy cream worked best here) produced excellent results. A little butter rounded out the richness of the sweet potatoes and brown sugar intensified their flavor.
