Why This Recipe Works
For a Chinese-style braised short ribs recipe with meaty ribs and a well-spiced black bean sauce, we browned our beef short ribs to give them color and flavor and to render some of the fat from the meat. Building our black bean sauce for our Chinese-style short ribs recipe, we found that water worked well to counter the beans’ pungent flavor. To enhance the flavor of the sauce, we added soy sauce for color and rich, meaty flavor, and rice wine for a bit of brightness, relying cornstarch as a thickener.
