Slow-Cooker Country-Style Pork and Beans with Sausage
Why This Recipe Works
When developing our slow cooker country-style pork and beans recipe, we settled on great Northern beans, a sturdy variety with a creamy texture. An overnight soak in salt water gave them a head start on slowly absorbing the moisture they needed to cook evenly. It also served to ensure that the beans would not rupture during the cooking process. For our pork selection, we settled on bone-in country-style ribs. To avoid the step of searing the ribs for our country-style pork and beans recipe, we browned tomato paste and a flavorful mixture of onions, garlic, thyme, and fennel seeds; we then smothered the unbrowned ribs with this mixture. We deglazed the skillet with white wine to pick up the remaining browned bits and added some diced tomatoes.
