Slow-Cooker Chicken Broth
Why This Recipe Works
For our slow-cooker chicken broth, we started with the most common technique for making broth: We placed all the ingredients—chicken, vegetables, aromatics, and water—in our slow cooker, simmered everything for hours, then strained and defatted the broth. Though we tested a number of ingredients for our slow-cooker chicken broth recipe, we found that we preferred a broth with fewer ingredients; in this case, onions, garlic, and salt best complemented the flavor of the chicken. As for the chicken, we experimented with several parts of the bird, finding that chicken legs alone and necks and backs lent a “livery” taste to the broth; however, chicken wings produced a broth that was clear, refined, and full-flavored.
