Baked Stuffed Onions with Sausage and Swiss Chard
Why This Recipe Works
For our baked stuffed onions recipe, we made progress when we stopped thinking of the onions as “bowls” and started thinking of them as hollowed-out, bottomless onion shells (made of a layer of three onion rings). We were able to prepare these shells in advance of cooking, which was a lot easier than trying to prepare slippery cooked onions. We tested a variety of ways of parcooking the onions for our stuffed onions recipe before finally settling on a combination method: We first browned them in a skillet, then briefly braised them. This approach both softened and browned the onions, making them a perfect vehicle for the stuffing.
