Pureed Butternut Squash
Why This Recipe Works
We cooked squash for our pureed butternut squash recipe using every method we could think of and found that the best results—in the shortest amount of time—came via the microwave. Because of the squash’s particularly creamy cooked texture, we discovered that our pureed butternut squash recipe only needed a small amount of butter and half-and-half, which enriched the squash without overpowering its delicate flavor. A scant 2 tablespoons of each for every 2 pounds of squash proved sufficient.
