Fried Eggs with Asparagus and Parmesan
Why This Recipe Works
For our fried eggs with asparagus and Parmesan recipe, we broiled the asparagus and were pleased with their light caramelization and deep, concentrated flavor, which stood up to the richness of the eggs and cheese. Because we wanted runny yolks that would serve as a sauce for the asparagus, we chose frying for our eggs with asparagus recipe because it was simpler than poaching. To add all four eggs to the skillet at exactly the same time (so they would finish cooking at exactly the same time), we cracked two eggs into each of two bowls and poured the contents of each bowl into the skillet simultaneously.
