Glazed Pearl Onions with Sweet and Sour Flavors
Why This Recipe Works
For a sweet, flavorful pearl onions recipe, we considered preparation and cooking method. Bagged and frozen pearl onions are available already peeled, but when preparing them from scratch we had to blanch the onions to loosen their outer layers before peeling. We found the onions were best served by a double cooking approach of browning and braising. Browning the onions in olive oil and butter helped to bring out even more of their natural sweetness in our
pearl onions recipe. We braised them in chicken broth, as wine was too harsh and water made them taste bland. Brown sugar and rosemary were welcome additions.
