Baked Rice Casserole with Butternut Squash
Why This Recipe Works
Our baked rice casserole recipe was different from our other baked rice because we had added flour to help bind the sauce. Rice cooks more slowly in flour-bound sauce because swollen starch granules trap much of the water, making it impossible for the rice grains to absorb it. To mitigate this effect in our baked rice casserole recipe, we precooked the rice on the stovetop before baking the dish.
