Why This Recipe Works
For the best pan-roasted pork loin recipe, we first seared the meat in the skillet for great browning. We also tied the roast to ensure a uniform shape that fit into the skillet, promoted even cooking, and yielded attractive, round slices. After browning, we slid the pork loin into the oven to finish cooking through.
